In all fairness, actual Italian food is trash. American Italian food is a million times better. Italians are the Cajuns of Italian food. Cajun think they can cook but it's trash. You don't go to Louisiana for good Cajun food you go to Mississippi. You don't go to Italy for good Italian food you go to America.

No, they are stagnant and bland. If you've only had American Italian here that ISNT how they cook there. Americanized restaurants and tourist traps there don't serve what people are eating in the villages and their homes.

I highly disagree. The few times I went, the food was incredible. Even the airport pasta was better than any Italian restaurant Ive been to in America.
Their ingredients are good, but their ingenuity isn't. They are incredibly rigid in their plates and unfortunately that means they fall far behind, ultimately making it hollow. Airport pasta in Italy is gonna be good because it's much more likely to be americanized. So are major restaurants in major tourist attractions. Go to homes and small villages. Eat. You will see.
Wasn't impressed honestly. I think a major aspect of Italian food that they definitely have a leg up on everything in america is their quality of ingredients. The Italians fuck around a lot, but they don't fuck around with their ingredients. Local fresh organic and natural.
I'm speaking from the culinary aspect of it. Maybe I have a different take because I was a chef for years, but honestly they had a good start and we said "I see what you're going for, now check this out".
Once again the French absolutely mog everyone else in the food department. Might as well rename France to Food.
Idk about cajun though, Ive never tried it.
