Hypothetically if somebody filled their yacht with guns and sailed into international waters, and then somebody from the UK met them there in their own yacht and purchased all those guns…would that be illegal?

It'd be a problem for who you are selling them to.
The principal issue is that international waters are very far out, so you and your contact need a proper ship. A little fishing boat isn't going to cut it. And ships like that are monitored and tracked and searched for exactly this reason.
Also pretty pointless when "What About Ammunition" (guide to making ammo in 100% ban countries) exists, as does the OG homemade firearms guide, the Luty books.
Anyone with a basic metal working shop can just make a Luty SMG cheaply and easily. And amusingly he was British.

Easiest way to get into UK without anyone searching you is by land vehicle. That's how all the illegals get in anyway.
