We don't know that it's a sphere, and it is in fact not a perfect sphere either. But it is reasonably enough spherical that we can travel around it. Many civilizations figured this out thousands of years ago through measurements.
The old Egyptians built obelisks to measure the surface of the earth. The metric system is based on 1/10,000,000 of 1/4 of the earths surface, physically measured. Christoper Columbus tried to get to pajeetistan via a shortcut to import cheaper curry, knowing that the earth was somewhat spherical but ended up in America.
The Vikings wouldn't have set of to America if they believed in an edge of the world which is implied by flat earth crazies.
Tall mountains and deep oceans is what ruins the perfect sphere, but they are relatively insignificant and it's been proven mathematically.

It's not the oceans and mountains that have the greatest effect on the earth not being an perfect sphere, it bulges at the equator due to centrifugal force.
Yep, that is a reasonable theory too. I believe in the moon too, as a spherical object with it's own gravity, circulating around earth in 1 month at the time. It explains some weather patterns as well as tidal waves in the ocean. These are all things we can observe with our own eyes.
