Some cooks are retarded. I do need some alternate opinions or I'm going to end up with sugar and mayo in everything I don't make myself.
Not excusing the taco niggers, but mainstream recipe sources suck.

Again, not pumpernickel. And would effect moisture, rising, crumb....
Pumpernickel is baked in closed tins under 250dF for at least 14 hours. It's cooked with the trapped steam and has almost no crust.
