Now that I think about it, the flour can be toasted first, then mixed into bread. That would be very tasty.

Again, not pumpernickel. And would effect moisture, rising, crumb....
Pumpernickel is baked in closed tins under 250dF for at least 14 hours. It's cooked with the trapped steam and has almost no crust.
