not a bad idea provided your plant the right crops

as for apartment growing just get green onions, they literally regrow after each harvest so you basically have an infinite source of seasoning veg for soups and fried meals, garlic is also a fine choice and it will scare away insects

Kudzu seems like an ideal candidate. It's considered an invasive species, so it's very capable of propagating itself without further tending, and produces roots/tubers that are more nutritious than potatoes.
