It's incredible that anyone believes ANYTHING the government says related to food and nutrition. I remember since the 60s the government giving health warnings regarding salt, eggs, butter, and anything with fat in it, saying people should exercise caution with these dangerous foods -- you know, the food people have been eating for thousands of years. Notably, they didn't show the same level of caution when it came to anything with sugar in it.

Good points all around. Knowing what we KNOW now you'd have to be a fool to trust what the government proclaims about anything at all.

It was quite a revelation for me when I began reading about food and nutrition beginning about 2012. I wanted to lose a lot of weight and didn't trust conventional wisdom about "healthy eating". What I learned changed everything I thought I knew about food.

My outlook on food changed considerably. I now see food as anything you make yourself from fresh ingredients. I don't see anything processed or take-out as food, just food-like substance that will keep you alive, but contains little nutrition and will kill you in time.

If you eat what your ancestors ate, and not too much of it, you'll be in good shape.

I make bread occasionally, but that's one of those things I make an exception for. Otherwise, I make pretty much everything else I eat. If you like homemade bread (and who doesn't), a good bread maker will change your life.

Be sure to eat your xanthan gum. It's good for you, unlike red meat, eggs, butter, and anything people ate before chemists got into the food business.

I know literally nothing about xanthan gum. I doubt I eat much of it since I rarely eat processed foods. What can you tell us about it?

Oh, I figured you were being facetious. I looked it up briefly but I didn't understand much about it other than it's made from bacteria, which is not bad in and of itself for that reason, but there are better natural food alternatives for its various uses.
