Funny thing is, the blessing actually skipped Joseph. In Genesis 48 Jacob gave the blessing directly to Joseph's two sons Ephraim and Manasseh instead, both of which ended up with a tribe named after them.
The other funny thing is their names meant something like "fruitful" and "forgetful" and both tribes straight up disappeared after the Assyrian conquest of Israel. You see other tribes mentioned even in the New Testament, but not those two, unless you count the part where Christ says he's come for the lost sheep of Israel.

It's clear from this prophecy and blessing that Joseph would exceed the limits of Israel's geography.
The rest of 49 is pretty awesome as well.
Yes, Israel adopted Joseph's sons as his own. That's why they each got their share of the inheritance.
