Most fruit have fructose which raises their carbs.

Celery, mushrooms, tomatoes (especially Roma), cauliflower, cucumber and courgette are very low in calories.

If you're making blended soups or cream sauces, blended boiled cauliflower works fantastically as a thickening agent and has FAR less calories than potato.

Lightly frying chopped cabbage in REAL butter and a dash of white pepper makes a perfect side-dish too.

I use grated carrot to thicken and sweeten tomato sauces, but only sparingly because 100g of boiled carrot has about 6 g carbs. Not huge but significant.
