You can leave the marrow in for the stock, if you don't want to eat it. I don't particularly like marrow, but some people love it.

Leaving the marrow in the bone will make for a thicker, more full-bodied stock

As far as the donkey is concerned, none of them that I'm aware of shit gold, unfortunately.
