You can eat the marrow if you like. Personally, I'd just make a good beef stock with them. Look up beef stock recipes.

You can leave the marrow in for the stock, if you don't want to eat it. I don't particularly like marrow, but some people love it.

Leaving the marrow in the bone will make for a thicker, more full-bodied stock

Look up recipes for “osso buco”. Needs to be braised long and slow, and yes, make slits in the fascia around the muscle as it tends to shrink.

You can do a very nice job of it in a pressure cooker after searing.

That looks fantastic. You've probably already done it by now, how did it turn out?


I'm very partial to bone broths. You can simmer for hours in a large pot with water, dash of ACV, salt, bay leaves, veggie trimmings (onion, garlic, celery, carrots). If you have an IP you can use that, but I find a stock pot allows me to make more. Afterwards cool in mason jars and you can skim the top if you want, but I leave it. It stays well in the fridge but you can freeze it if you prefer. You can use it in soups and stews or just enjoy plain.
