I agree that in the example you provided the game's character does look more like someone from Indochina, Malaysian, Indonesian or Polynesian than Japanese. I just think the developers of that game have already shown they don't care about getting anything right, so it doesn't much matter.

Modern game devs seem to enjoy taking any woman in a game nowadays and making her browner and fatter, so it could be a result of that as well.
