Mexico didn't even have cheese until the White man arrived. Prior to the Spanish arrival, dairy products were unknown in pre-Columbian Mesoamerica.
The Spanish conquistadors brought cattle, goats, and sheep to the New World in the 1500s, along with cheesemaking techniques.
