Because you're paying to be there.
If I don't want service I'll stay home and cook for myself.
i am paying for regular service, i'm not some sort of king and i don't need plebs entertaining me. i only want to be served tasty hot food in a reasonable time and that's what all restaurants should be about.
no, fake nice is just that, acting friendly when i know they are not my friend and they are not happy to see me at all. they just work there.
professional does not mean nice. it means being normal and decent.
Say I am a waiter. I AM happy to see people come into the restaurant because they are the reason I have a job. If no one shows to be served, they don't order food, the business goes under, I don't have a job. It is literally in my best interest then to give people good service. And the better the service I provide, the more likely my own security is assured.
It's been probably 15 years since my last waiting job but at all of my jobs I always gave it my all.
Sounds like many people need an attitude adjustment.
I think you are confusing good service with over the top service.
I expect good service everywhere, not just from waiters. I dont tip the bank teller for solving my issue, i dont tip the bus driver for driving me around and so on.
Good service is just regular service. Regular service should not need to be rewarded.

Okay. But when people say tipping is bad, pay your workers more, that is, quite literally, rewarded at minimum mediocre service.
