I rinse birds in the sink and then pat them dry before I begin seasoning. I don't wash them with soap because I don't want to risk consuming soap and it seems unnecessary since I'm about to cook them to 165-F.

Whats the point? You must wash the entire sink with soap afterwards to avoid salmonella contamination.
