I rinse birds in the sink and then pat them dry before I begin seasoning. I don't wash them with soap because I don't want to risk consuming soap and it seems unnecessary since I'm about to cook them to 165-F.
You cover that bird in recovered bacon grease that has been mixed with salt, pepper, rosemary, thyme, and sage.
It is even better if you can get some under the skin.
do you wash your steaks too? ffs
