Unlike many Western countries, South Korea does not have a comprehensive anti-discrimination law covering public accommodations. This means that while a business cannot violate specific consumer protection acts regarding fraud, safety, or contract terms, they do maintain the "freedom of contract" and can choose who they do business with.

You still can refuse service ... In Texas, the "We Reserve The Right To Refuse Service to Anyone" signs are everywhere.

I suspect the climb is optional.
Also, this would be illegal because it endangers customers in case of fire and impedes firefighters.
The store could never exist because nobody would insure it and the council would immediately revoke the business license and close the store.
If the rock climb was voluntary and customers were required to sign away their rights to sue in case of injury, someone would eventually fall and sue them into bankruptcy by claiming the business failed to fulfill their legal health and safety obligations which can not be signed away.
