Here is a classic recipe for thin Russian blini (блины), often affectionately called blinchiki. They are traditionally served during the week-long holiday of Maslenitsa, which marks the end of winter and the beginning of Great Lent.

Classic Thin Blini Recipe

Ingredients:

Flour – 200 g (about 1.5 cups)
Eggs – 3 large
Milk – 0.5 l (about 2 cups)
Butter or vegetable oil – 30 g (2 tbsp) + extra for frying
Sugar – 30 g (2 tbsp)
Salt – 2-3 g (0.5 tsp)

Preparation:

Mix wet ingredients: Break the eggs into a bowl, add salt and sugar. Whisk until smooth. Add about 100–150 ml of milk to make the mixture more liquid.
Add flour: Sift the flour into the egg mixture. Mix thoroughly with a whisk or mixer until there are no lumps.
Finish batter: Pour in the remaining milk and mix again. Finally, pour in the melted butter or vegetable oil and stir well. The dough should be quite liquid, similar to heavy cream consistency.
Rest: Let the batter rest for 15–20 minutes at room temperature; this allows the gluten to relax and results in more tender pancakes.
Fry: Heat a non-stick skillet over medium-high heat and lightly grease it with oil. A traditional saying states that "the first pancake is always lumpy" (первый блин комом) because the pan isn't hot enough yet. Ensure the pan is very hot before starting.
Cook: Pour a small ladle of batter onto the center of the pan and immediately tilt and rotate the pan so the batter spreads into a thin layer covering the bottom.
Flip: Cook for about 1–2 minutes until the edges darken slightly and the top surface looks dry. Flip the pancake with a spatula and cook for another 30 seconds on the other side.
Stack: Stack the finished blini on top of each other; you can place a small piece of butter between them to keep them soft. Turning the pile upside down occasionally helps distribute steam evenly.

Serving suggestions: Blini are incredibly versatile. You can serve them rolled up or folded into triangles with:

Sweet fillings: honey, jam, sweetened condensed milk, fresh berries, or sour cream.
Savory fillings: smoked salmon, red or black caviar, herring, sautéed mushrooms, minced meat, potato, or tvorog (farmer's cheese). For savory versions, simply reduce the amount of sugar in the batter to one teaspoon.

Variations: While yeast-based recipes exist for thicker, fluffier blini, this version uses chemical leavening from mixing to create delicate, lacy crepes. Modern variations also include adding grated zucchini and turmeric for green blinchiki or incorporating buckwheat flour for a nuttier flavor profile.
