On the Eucharist: Catholic doctrine is not that the consecrated Host becomes ordinary human tissue or ordinary blood in a laboratory-detectable way. At consecration, the substance of bread and wine becomes Christ’s Body and Blood, while the appearances—or “accidents”—of bread and wine remain: taste, color, weight, chemical properties, and so forth.
So a chemical analysis would still register what appears to be bread and wine. Yet by the Church’s doctrine, Christ is truly, really, and substantially present—Body, Blood, Soul, and Divinity—under each species. It is not merely a symbolic or “spiritual-only” change, but neither is it a crude physical transformation into ordinary meat and blood.

That being said, there are some Eucharistic miracles, where it actually DOES chemically change to Flesh and Blood. And the blood is ALWAYS AB+, the Universal Receiver.
