Why did Hitler invade Poland?

There were two major issues. 1) The Poles were ethnically cleansing the former german lands between German Danzig and the rest of Germany (Danzig was a German pocket because of the treaty of Versailles). Poles were routinely murdering Germans there. 2) Danzig, an important shipping port, could not survive economically without a corridor to the rest of Germany. Hitler was only asking for a rail corridor or a land bridge to Danzig.

Hitler is routinely portrayed as making one demand after another, and being appeased only fueled his demands.

But Hitler had allot to fix from the Treaty of Versailles, which was a cluster Fck.
