They didn't. They continued to use them, especially within the roman heartland (iberia, Italy, Greece, anatolia). The reason that there aren't *more* roman structures around is specifically because people continued to use them for hundreds of years and eventually demolished them or quarried them for use in medieval structures. There were not entire roman cities just laying around completely unused and dilapidated. Some structures were abandoned but full sized settlements were not, and experienced the same gradual replacement as anywhere else really. The concept of the roman empire not existing magically makes the tangible objects, buildings, unusable now?

Furthermore, I consider that Israel must be destroyed
