If you are willing to give up some of the modern conveniences, then you can just live in a cabin like your ancestors a few hundred years ago. They got off a ship after a dangerous months long sea voyage and had little more than an axe and had to survive the wilderness. If they could build cabins with an axe, what's your fucking excuse now that you have power tools and solar panels and batteries and engines?
Just be careful where you buy land. You have to research the laws, the kind of people in that area, the politics, the regulations and restrictions on your usage of your own land, building rules, etc. Maybe contact the county zoning or deeds office and ask around and try to get good advice from the local bureaucrats how you can avoid their trappings.
I like to build things off grid with no permit and i try to camouflage all my buildings to blend in with tree canopy and the land. I even built a cabin into the side of a hill and mow the grass on top of my cabin. Kind of like a hobbit house. You see the front side of my cabin but the other three sides and the roof look like a natural hill.
