Pretty easy to replace though. Better to go for the grid and then there is no power to boil water.

They aren't easy or cheap, otherwise drought ridden California would have them up and down the coast. But lets hope they hit both anyway.
When your population is going out to the ocean with pots and pans to boil water it's pretty much a guarantee that you'll call it quits pretty damned soon.
Desalination plants are also not easy to replace at all. Especially not reverse osmosis plants.

You can rig up a servicable boiler style desalination plant a lot easier than a power plant. Even if your bottom end parts need to be constantly replaced because of the heat and salt, it is still doable. If any part of the plant is damaged, it is easily replaced. If those precise turbines or fuel get hit in a power plant, shes probably fucked.
Jews probably want that to happen though. They'll bitch and moan of mah war crimes as they strike Iran and rally a full blown ground invasion of Iran. This is exactly what Israel wants.
Iran's only real play here is acquiring nuclear warheads. Unfortunately, I truly believe Iranians never truly were trying and that mistake will forever bite them. No nuclear power will help Iran so they're screwed. Russia is benefiting too greatly from this war to truly help Iran and Pakistan relies too much on the Saudis.
The only play I see is Iran playing Pakistan and India off each other somehow. Essentially, offer to help one country gain complete dominance over the other if they were given nuclear weapons. Iran has the potential to cutoff Pakistan completely from Saudi Arabia by dessimating the Saudis which would play significantly into India's hand. If Iran could secure a deal with India to fuckup Pakistan while also guaranteeing India's safety from potential Chinese aggression and establishing a stronger BRICS maybe they have something but this sort of negotiation would be nearly impossible to conduct and it's highly risky for all parties involved. It's pretty far-fetched but it's all Iran has. Iran needs nukes or it's over for them.
