I know its a little late, but if you've got a bird with most of the meat stripped off still in the fridge, don't throw it out! I just broke ours up and crammed it into the pressure cooker. Added a bunch of water and cooked for 3hrs. Made 3L of insanely rich broth. And I managed to recover another bowl of meat chunks as well. The broth freezes easily in plastic bags and then you can use it any time to make a quick and awesome soup.

I buy a bigger bird fotthis reason, make a huge batch of turkey soup with the bones and leftover meat. You can add carrot and onion peelings and celery leaves to the stock. You know your stock is good when it is like jello when cold.

We do this with rotisserie chickens. We pick off the meat we want for a few days and then I throw the whole bird into a stock pot FULL of water and let it simmer for hours until there's nothing but pile of loose bones left at the bottom of the pot. I run it through a strainer and I can fill at least a 32 oz. Mason jar with the chicken gravy and keep it in the fridge. I pour a little over our dogs kibble and he devours it.

Do this with all your bones year-round. Make sure to crack those big bones open so you get all the marrow.

Do it for chicken carcasses as well. Wicked good broth. You want some REAL chicken noodle soup? It's beyond delicious.

You can use it for reconstitution for any meat and it makes it taste Godly. Stews and pastas become delectable. You can also just warm it up and drink it.

I know right? The boxed broth tastes like salt water by comparison.
