A customer overheard me philosophize on what young adults should be paid for work. At a restaurant, our margins are pretty thin so $8 for a guy with no skills and no value is pretty reasonable. If they can be useful I'll bump it up to $10. If they can work with little supervision the sky's the limit!

Of course I'm splitting tips among the hourly workers. They end up with at least $20 for a 4-hour shift, though on the weekends they got over $70 a few times. (If my customers won't tip, I'll bump up the prices and raise wages to compensate.) At the end of the day, they should be bringing in $15-$20/hr once they show me they can do real work. You can't raise a family on that kind of money, but I'm not asking for much.

The customer who overheard me ran his own business. He said he wouldn't hire anyone with experience. He'd rather train young people. His starting wage was $15 for a guy with no skills. Since actual work is way harder than restaurant work, and requires far more detailed skills, I agreed that was a good strategy.

Folks, $15/hr at 40 hrs/week adds up to around $30k/year. If you're still living with your parents, that's good money. I am sure once you learn the trade he'll bump up your pay accordingly. I know these guys bill out at $100 to $150/hr of work, so I imagine if they had a guy that could do the job with little supervision, $50/hr = $100k /year is not unreasonable. That kind of money is enough to raise a family if you're careful with your budget and your wife is cooking home-made meals and watching the kids. I know lots of guys doing just that in our town.

I'm more than happy to pay trade guys $150/hr of work, especially if they do the job right the first time. I don't negotiate with them. I figure the first price is the fair price. If the price is out of my range, I'll let them know I'll contact them when I have enough money to pay for it.

Of course, if they show up to work with a bunch of mexicans, I'm out. Sayonara amigo. I'll hire the guy that hires American workers, not the burrito eaters.

If my restaurant isn't bringing in $1m in revenue a year with something like $300k raw profit, I'm doing something wrong. I'm more than happy to share my revenue with people who are worth hiring to do jobs I need done. I hire local as much as I can!

This is in rural Texas, by the way.

Other companies have massive margins, exceeding even 90%. Software for instance.

30% is pretty thin. A shift in the marketplace will put us out of business. A bad reputation and it's over. If one of the local factories goes out of business we're screwed.

Still, I don't think being a waiter or waitress is a career as it's low skill. In a perfect world all waiters and waitresses would be pimply high school teens. In reality it's different.

It depends on where you live, and what restaurants you work at. I know two guys. Ones in his fifties now, and the other in his forties. Both are back here in New Orleans now, and both make amazing money working in the French quarter. The one who left for a while was in Miami, and he made very good money there too. They were both fucked hard during Covid though. Yeah, they were able to get the emergency welfare shit, and survive, but it wasn’t nearly what they made working. One of them now only works two days a week and is still able to cover most of his regular monthly expenditures. The only real negative about the job is you have to work weekends regularly to make the good money, and you deal with the public all day long including lots of troublesome uppity niggers. I could never do it for any amount of money.

Unfortunately after taxes, and having some type of health”care” coverage, you’ll be lucky if you have 20k to live on for the year. If you actually have to use the health insurance, your average deductible depending on plan will instantly knock you down to 17-15k to live on. Even if you live with your parents, if you have the bare minimum reliable vehicle with no car note with liability just to keep ZOG off your back, that’ll knock you down another $500-$1200 a year depending on age, and where you live. If you have even a modest car note, that means you have to have full coverage, so you can instantly double your insurance price on top of adding said car note. Then there’s fuel prices. Your phone bill on the cheapest end will be at least $250 a year. Then there’s possible food, utilities, and rent bills depending on how much your parents let you slide on.

All in all, I’d say if you make 30k a year, the average person that is still able to live with family would be extremely lucky if they have more than 7-10k TOPS left for any extra curricular activities(sanity), savings, and emergency funds. I’m likely being very generous, and forgetting things. Now, with all that said, we’re only talking about working 40HAW, and you can always try to fit something else in to supplement for more money, but that seems harder to do today than in the past from my understanding, and long term it can really take a toll on your heath especially if you can’t find ways to keep your schedule somewhat regular, and get regular sleep.

I started roofing at $16 with the understanding that they'd train me and pay me for what I could do. I was making $20 by the end of the first year.

I think it's the best policy for everyone. The company can be less picky about hires and the enployees who put in the work get bumped up rapidly.

I taught my kids to sweep floors. I told them, "You can get pretty much any entry-level job and get paid well just because you know how to sweep floors."

My son got his first apprenticeship as an electrician and he swept the floor. The boss's jaw dropped and gave him an immediate raise. He was working directly under the boss and fixing other people's work by the end of his 3rd month.

Split the tips between hourly staffers. The guy working the grill doesn't get tipped directly. So the wait staff splits the tips with him.

Having the wait staff split the tips with the other hourly workers incentivizes the wait staff not to have other hourly workers. They're much more willing to pick up the other tasks that go along with running a restaurant so that they can keep more of their tips.

Also, they should be tipping the cook staff. There needs to be cooperation between the front and the back. Restaurants die when the cooks and the waitresses don't get along.

We talked it through with the wait staff before opening, all the different models, and they all agreed that since we are running an East Texas hamburger shop, that's the tradition we'll follow. If we were running a fancy french restaurant, it would follow the other model.

Let me share a story with you

I was standing outside the vet waiting for him to finish neutering my bull calves. He had a few customers before me so it took a while to get to my cows. In the end, I was standing in 95 F heat for about 4 hours. There were fans to keep me and the animals cool but I was done for.

I went to a local burger / smokehouse joint that's been around since the 70s. I walked in, the waitress asked what I wanted to drink, and before I sat down I had the drink in my hand. I never had to say anything, that cup was full of drink the entire time. She knew I was dehydrated and she knew I needed water.

She took care of me when I needed someone to take care of me. I was more than happy to leave a generous tip. She wasn't a college student. She was probably someone's grandma.

That's the kind of wait staff I'm going to have at my restaurant. People who understand the work that men are doing outside in the heat in summer, or in the winter in the cold, and are going to make sure that they're taken care of if they decide to set down in my restaurant and order a burger and some fries.

I had similar experiences to the one you just described, i always tipped generously when i get such exemplary service

But more often than not i get shitty, lazy service from ungrateful college fags who are clearly pretending to work than actually working

Though this days i rarely eat out, since its an incredible waste of money and your "Tenderloin steak" is actually something else yet still costs the same

If i don't want to get ripped off i have to buy and make everything myself, by hand

Which always come better because i know my seasonings and olive oils
