Cut out middle man and you work directly with customers.
Tell them you do not work for money. You barter for gold and silver coins. You equally exchange labor for gold or silver bullion. No income. No profit. In fact, your time is arguably more valuable than gold or silver so you are actually taking a loss on the barter deal.
Avoid sales tax by largely reducing what you purchase from retailers. Grow and produce as much of your own goods as possible. Barter for the rest. You're not "purchasing" something. You're just trading equal value for equal value. There is no sale to tax. Just an even trade.
Property tax? You buy land and build a house off grid or you make it look like your home is on wheels and is not affixed to the land. Or you build your home underground without permits. There's no residency to tax. Let the appraiser appraise your land for low as possible and do not show evidence of improvements for them to reappraise.
