Crack two eggs in a pan so they're touching.

Break the yolks by placing two slices of bread on top and let the eggs fry.

Flip the egg/bread and lightly toast the other side. Add cheese if you like.

Remove from pan. Add toppings to taste (lettuce, tomato, avocado, onion, salsa etc). Fold over to make a sandwich; the egg will hold in the toppings.

Optional: add shredded chicken or ground beef before the cracking the eggs.

2 eggs over easy, White toast, bacon. Over easy eggs on toast takes 10 minutes, max.

I'm a carb fiend and always eat hash browns too.

rice cooker with steam tray, rice & lentils 2:1 in the pot, vegies in the tray and top with 8oz fresh or thawed fish. takes 5 minutes of prep, 20 minutes to cook
