Push their idiocy back onto them. Mock their stupidity with simple questions, forcing them to reevaluate rather than stand firm in the growing spotlight of their stupidity.
For example, when someone says the "not all x" crap, apply it to dangerous animals. Not all lions eat people, therefore lions can't be condemned under collectivist judgments, so you should go hang out with lions. You're not a racist against lions are you?
Most bear encounters are peaceful, therefore "not all x are like that", so you should go hug all the bears, right? Continue examples as needed until they argue "but animals are different than people". Then ask them why. Once genetics comes up, you can then press them on the stupidity of "socio-economic factors" determining behavior. If they're right wingers, ask them why men and women are different (i.e. genetics). This leads invariably the race realism and genetic differences. When that comes up, just be sure to have your arguments and stats in order.
