hell i remember how i used to have an onion allergy (made me shit my guts out) i eat onion soup in an amsterdam hotel for like a week straight and then developed a strong tolerance for onion and since then its like my favorite [based] vegetable
there is no such thing as "allergy" if you consume something, your system will adapt to it and break it down (unless its nut allergy, then you die like a dysgenic little bitch)
I used to be like that too, but its gone away the older I've gotten. Can't say I really upped my exposure though. Pet dander used to *really* set me off, cats and dogs alike, but it doesn't anymore.
Cat dander would make me tear so much I was forced to leave the house. Then the allergy went away after I listened to a few Hitler speeches. Okay, I have no clue why it went away.
I doubt the test subjects suddenly start producing sufficient enzymes, though I reckon the gut bacteria might adapt. Bacteria play a big role in breaking down things the host species cannot digest on its own, and there are plenty benign ones that can utilize lactose.
