In an environment without trees for shade a pig will naturally seek alternatives to the sun which will include wallowing in mud and feces.

On the flip side, pigs fatten up and reach sexual maturity within a year - you can quickly raise a lot of meat.

I realize semites are filthy with parasites, but so are chinks and they eat plenty of pork

Parasites are the hidden hand in much demonic behaviour. A lot of religious fasting and dietary rules have to do with parasitic activity, which is often higher in different seasons or moon cycles.

Part of it might be that pigs are the only livestock that doesn't produce until it's slaughtered. Chickens lay eggs, sheep grow wool, cows and goats can be milked. But pigs don't do anything until you butcher them. I can see why that would make them more economically risky. There's less hedging for their utility.

Also, ancient food preservation wasn't up to snuff for pork. That's why shellfish were bad as well.
