Hong Kongers aren't mainland chinese, same with Taiwanese

they are essentially the creme that was left unraped by mass communism because those islands were under British control at that time

I had assumed both were Han though, but I am aware there are multiple ethnicities in China.

They are technically categorized as "Han" but its worth remembering that "Han" themselves are actually made out of many different groups and are only lumped in to one group for political convenience for the CCP.
