You are not wrong. When my spouse initially got into biotech about 10 years ago, she was offered a minor in brewing beer believe it or not. This sparked quite a few rounds of water testing at my home, since the purity of the water used in brewing can have many different effects on the process and the final product. Even though we soften our water using a traditional salt system, she was not happy with our water until we installed a carbon filter system between the softener and the house.
We get about 4 months out of our carbon filter, at $60 bucks a pop, but the water quality is well above local tap water, it's not even close and noticeably different in taste.
