Same thing when people talk about anything "ethnic". If you said "I don't like ethnic food" that means you only like white people food, implying white isn't an ethnicity at all.

There isn't a single "Caucasian" race. There are several White races. In addition, there is no one "jewish people". There are several genetic groups with little in common other than religion, all claiming to be "jewish". Ashkenazis are a mixed race people of various European, Levantine, and North African tribes. They cannot really be called Hebrew, and any connection to the tribe of Judah must remain speculation.

There are different Asian groups too, but good luck trying to differentiate them. It is easier to just lump them all into one group.

Sure, there are some easy to spot differences, such as mongols having long hair, vietnamese people look hawkish, and koreans have bigger heads, but still, it be easiest to just refer to them as one group.

Same logic applies to white people. There are different types, but you probably can not tell the difference between one from france or Germany or britan just by looking, so it is easier to just lump them together and dub them white.
