Had a lot of family and friend ask me about this recently. As chrome manifest v3 takes over ad blockers can stop working or be more sluggish.
Move to Firefox and use ublock origin. It's opensource, not Chromium based and much better for privacy and you can import all your crap on install. Nvidia super resolution now works for it as well.
Youtube blocking should already be working. For a site like Twitch you would follow the directions here.

-Navigate to the uBlock Origin Dashboard (the extension options)
-Under the My filters tab add twitch.tv##+js(twitch-videoad).
-Under the Settings tab, enable I am an advanced user, then click the cog that appears. Modify the value of userResourcesLocation from unset to https://raw.githubusercontent.com/pixeltris/TwitchAdSolutions/master/video-swap-new/video-swap-new-ublock-origin.js
To ensure uBlock Origin loads the script disable/enable the uBlock Origin extension (or restart your browser).
If youtube comes with anything in the future you could easily bypass it the same way you are bypassing twitch. A proxy. In the past there were filters for youtube as well but looks like they are included in the newest version I just tried. Hope it helps.
