Lots of people will say they are lactose intolerant and refuse to eat any dairy products. But lactose is only present in sufficient quantities to cause problems in milk and cream. Practically all cheese, yogurt, sour cream, cottage cheese, and so on all have had the lactose removed or broken down by enzymes during fermentation and won’t cause problems. I know a lot of people fake gluten allergies too. What is the problem/mental illness happening here?

This is actually true. It's best done in childhood when you first notice yourself developing a lactose intolerance. I almost lost it when I was about 7 or 8 and that's what I did. I started drinking way more milk (I already did a good bit) and what started as daily stomach pains went away.
