Roasted cabbage is pretty solid as well;

Cut a head into 1" slices;
olive oil, salt, pepper, and fennel seeds on both sides;
20 to 25~ minutes, flip once

Turns into tasty, tasty, buttr'y goodness. Suh good. 🤤

OR... Sautéed, and served over egg noodles.
