I've been doing a pork/mushroom/cabbage stew in my crockpot lately. It's super simple and makes a week's worth of dinners for one for all of a few minutes of prep work. Recipe:
~1.5lb chopped pork (other meats also work)
1lb chopped/sliced mushrooms of choice
1lb chopped onion
2lb shredded cabbage
1 large can condensed cream of mushroom soup (thickener/umami booster)
1 box chicken stock
2 tbsp italian or bavarian seasoning
1tbsp black pepper
1tbsp salt
If you're feeling extra lazy you can just buy everything pre-chopped, dump it in the crock, give it a stir, and let it cook on low overnight. I would suggest adding the cabbage last and after the stir because it takes up a lot of space but cooks down nicely.
Oh for sure. This is 100% a "there is no excuse not to eat healthy" recipe. I find it makes it a lot harder to justify doing a goyslop run when you have a batch of this cooked up and ready to reheat and eat.
