I didn't see it and I don't care because I already know. Ancient grains and stone milled are actually very healthy and we ate 60%+ of our calories with it working all day with physical labor intensive jobs and fighting wars with no health issues. In fact our natural life spans were longer and our bodies were healthier and stronger back then than today, it was only because of war that we had shorter average life expediencies. So without war, people lived past 90 and 100 much more often.

Similarly to eating boiled Italian grains, you still needed protein

While not as good as red meat or raw dairy, proper bread protein is still very good and can easily make up the majority of your food. They also used a lot of beans and legumes in their bread, calling it "horse bread."\
You really need to actually study these things instead of listening to random online influencers telling you what to think instead of actually reading sources and understanding the material your self.
