You can incentivize cash or Bitcoin payment.

Offer 15% or more cash price discount or 10% discount through a Bitcoin payment portal to your digital wallet

If someone insist paying by credit card or check you better be marking up the price 20% or more for that alone. But I have enough customer that people pay what I want how I want or they can fuck off and go to back of the line.
