The Talmud discusses disrespecting idols in the context of nullifying their status as objects of worship, primarily in Tractate Avodah Zarah. The specific reference to damaging a statue's nose appears in:

The Mishnah states that a gentile can revoke an idol's status by defacing it:
"How does a gentile revoke the status of an object of idol worship? If he cut off the tip of its ear, or the tip of its nose, or its fingertip..."
This is codified as a method of nullification (710'7)-intentionally damaging the idol to show it's no longer revered. The act must be done by the idol's owner (a non-Jew) with the explicit intent to repudiate its divine status. Once properly nullified, the object loses its forbidden status and can be used for mundane purposes

Yes and one step further is it was Christians who did this because early Christians were Jews and Christians were the ones who inherited that identity and destroyed and defaced the pagan temples of Europe.

Almost instantly they divorced themselves from the Pharisees, and when the pharisees tried to sneak in the back door they were shut down time and time again.

Give me proof it was Christians defacing pagan temples. You'll probably find cases where Christians were retaliating for being mass-slaughtered by people trying to force paganism down their throats, but mostly Christians were fine living side-by-side with pagans.

Christ showed how paganism and "judaism" (actually Moses) were not enemies. He provided a path to bring the pagan into the circle without the pagan having to give up his culture or history. That was the message that Paul and others brought to the world. You don't need to cut off your foreskin to be acceptable to God, for instance.

Paul spends a LONG time trying to explain why eating meat sacrificed to idols is no sin, except for the fact that some Christians (jews) were so weak in their faith that they would be offended by it because they can't understand simple concepts like "Jesus saves" so it's probably better not to piss people off for little gain.

The historical record shows that it wasn't Christians running around burning books and destroying temples. If anything, they were preserving them.

I don't completely buy it. Sure, jews probably did this, they always do some shit, but their belief in doing this was likely them being copycats of every other culture around them. It's not just because it's a bit sticking out. In cultures unrelated to Europe and the near east, like China and others, most of the ancient statues have noses.

Defacing a statue by destroying the nose was an extremely common practice, especially in Egypt, which is probably where jews learned to do this. It was believed that the statue had a spirit and by destroying the nose, the statue could no longer "breathe", so they were killing it.

Christians and, most infamously, Muslims also picked up the habit somewhere down the line. Probably also largely from Egypt. This is actually one area in which the jews dont really stand out much. The fact that the purpose behind destroying the nose is virtually unchanged from the pagan ancient egyptians is further evidence that its all people copying them. The pagan romans may have picked up the practice themselves too. In all fairness too, back then defacing a statue was different from doing it now. It wasn't exactly a priceless ancient artifact when they were still being newly made.

Jews consider the act of cutting someone's nose off is a fate worse than death. Cutting the nose off a statue(idol) is just as good as destroying it.
