It's because people forgot how things actually happened in history somewhere down the line

Interracial marriages between whites and natives were somewhat common, but it was usually the other way around. IE; the child and/or their white parent would be grafted into the tribe rather than the Indian/half-indian child being grafted into white society. This is because the interracial marriages almost always took place in areas where the tribe would have something to offer a homesteader in the middle of scenic nowhere. Particularly in the frontier regions of southern appalachia and the great plains. And the natives obviously had population and demographic issues, so adding whites to the tribe was a good bandaid to slap onto the problem. Well, so long as they were friendly towards whites. The Cherokee would graft you in, the Comanche would flay you alive. Different strokes for different folks.

To give an example of how much some tribes grafted in non-natives, look at the lumbee. It was, probably, originally a native tribe inhabiting the lumber River of North Carolina. Likley cherokee, maybe choctaw. So many whites and even blacks were grafted in that they now have single digit percentage amerindian blood. They look more like Dominicans or something today than natives.

The descendants of their offspring are living in reservations right now. It's not your great great grandfather who's Cherokee, your great great grandfather's brother married a Cherokee woman and moved into the tribe and was lost to history. It's not the white dude who has a native ancestor, it's the "full blooded indian" who has a white ancestor. Just look at haplogroups, indians are absolutely chock full of white paternal dna. Especially the 5 civilized tribes, which also happen to be the ones that whites claim ancestry from all the damned time. This is where people get history mixed up and confused, misreading their family tree. There's a good chance that a white American has distant cousins that are native. Small chance that they have native blood.

 The reason it gets passed down as "my great grandmother was a full blooded indian" is because of a potentially centuries long game of telephone, someone had a relative who married into a tribe and over 150+ years this turned into "i have an ancestor who was in that tribe".
