always use honey or coconut sugar (its got great flavor) for Teas and brews
i do use Stevia at times but its not really good flavor wise (its either too sweet or it got a strange aftertaste, shelf life is also not very high while honey lasts FOREVER)

But what makes honey sweet and sugar is sweet is the exact same thing - glucose and fructose. They're both carbohydrates. Honey has some health benefits but plain old sugar isn't exactly bad for you either, they're both just simple carbohydrates that will be stored in your body as fat if you eat too much of them and do not burn them off.
Which is the real problem with sugar. Too much consumption. It's also in everything. But a life completely devoid of sugar and a life with minimal sugar is going to be the same. A splash of simple syrup is not going to do anything to anyone ever.
Honey also affects the taste of everything that it's in. And it's a strong flavor too. Sugar doesn't, it's just pure sweetness. Honey also doesnt dissolve into a solution as easily as sugar does. There's a reason that Europeans went apeshit over sugar, Honey has a much more limited range of applications than sugar does. If you don't want something to taste specifically like Honey, the best option is sugar.
