Europe is neither Israelites or Edomites (Esau).
But, Jews apply the name "Esau" and "Amalek" to any nation that has attacked Jews. So, all the commandments against Esau and Amalek are being applied to the nations of Europe as well.
Also the Edomites razed Jerusalem and the 1st Temple. The Romans razed the 2nd Temple. At one time, much of Europe was under Roman rule.
"Remember against the Edomites the day of Jerusalem, how they said 'raze it, raze it to its foundations'" in Psalm 137:7.
It would be hypocritical not to apply the rules against the nation of Esau and not apply it to the nations of former Romans. Even though the Jews initiated the war with Rome.
Your next to last sentence makes no sense. "It would be hypocritical...", no, it would just be insane. To say "this empire once ruled over your territory. We hate them, so we have license to kill you." is illogical stupidity, the kind of mindless hatred found among the desert races.
