I could probably build off grid cabins like this just by finding materials on trash pickup day. Scavenging and salvaging. Easy to find lumber, old windows, pieces of sheet metal, pipes, etc.

The idea is to NOT CONSOOM PRODUCTS.

Paint the cabin dark green so it blends in with the canopy and is not identified by satellite imagery.

You don't want county appraisers noticing new structures on your property that you never obtained permits for.

Would mounding dirt around the home to hide it cause issues? Not necessarily right against the structure. Drainage for rain water would need to be considered I'm sure

Probably wouldn't be a problem as long as you considered a good drainage system so that your cabin doesn't become a catch basin for rain water or mud.

There are some videos of in-ground compounds people built on their own. One comes to mind. If you want i'll post one or two. Someone in my family built a home into a hill and mowed the grass which was his roof.
