Don't take it, if the vax is the new tech (mRNA).
If it's a traditional vax, millions have already taken it over several decades. It's still not without risks, but at least the risks are better understood.

I would never take a job that requires I take *anything*. I don't care if it's "low risk", I take my own risks. I'd take a job dangling from a rope 100ft over a pit of broken glass before I took this one.
What happens if you're the one-in-a-million reaction? Are they going to pay damages? How about for the next shot they require? The one after that?
This is a job for slaves. If that's you, go ahead and take it.

Agreed. I wouldn't even take "mandatory" alcohol and drug tests. One company I worked for required these and I always either ignored them or outright refused. Nothing happened. They just kept asking and I kept refusing. This was in tech, btw.
