Tbh, plants are full of anti-nutrients like oxalates, lectins, tannins, glucosinolates, protease inhibitors, phyto-estrogens, etc.

Why not meat? All the stuff you listed is just filler. Humans don't *need* plants like we need meat. Don't get me wrong, having some plants on the side of your meat is good but the vast majority of every meal should just be meat. Personally I like steak or lamb with celery and hummus.

I like making sauces and what not. They'll still contain meat but I enjoy to eat for pleasure and cook well- just eating meat for the sake of "fuel" is unappealing.
