In Saladin's case it's less ethnic identity (he had enough power to create a Kurdistan whenever he wanted to, and he never did)
It's more because early Muslim leaders (some time after Muhammad died) fell under jewish lies to be used as a battering ram against Christians. Even though there are hadiths and Sunnahs against the jews. Here is a passage that *rails* against the jews:
